I tried a new squash dish last night and it turned out well. At least I enjoyed it, and it made the yellow squash a little more special.

Changes I made....I left out (forgot) the sugar and I used light
mayonnaise. I topped with crushed saltine crackers. I turned up the oven (400*) right before I took it out of the oven so the topping would make a nice crunchy top. Just toast until you are happy with the color. I also drained the squash and then pressed the water out with the back of a spoon while using a colander. I think it kept the dish from becoming watery. I cooked the onions along with the first cooking of the squash...I don't like crunchy onions.
Doesn't that look good? How about using broccoli? Or mixed vegetables?
