Easy Jalapeno Poppers

 Today we are having Taco Soup and on the side are these easy jalapeno poppers.  I have them all ready for the oven..they have been prepared and in the fridge since early morning.  So prepare ahead of time, but you can prepare whenever you need a boost.


Easy Jalapeno Poppers
3 or 4 large jalapeno peppers washed and sliced in 1/2 length wise
4 oz cream cheese at room temperature
grated cheddar  (as little as you like or as much as you like)
Precooked bacon that you crisp in the microwave for a few minutes

Slice peppers in 1/2 and spoon out seeds.  Crumble bacon, mix with cream cheese and 1 Tablespoon cheddar cheese...or use any cheese you like. Fill peppers and top with more cheddar.
Bake @ 350 until the cheese is hot and melted.  Serve warm.
