Not a drop of meat, so think of all the calories you are saving. Now, I did use flour, an egg and bread crumbs to bind it together, but surely it is still has less calories. At least I hope so.
I got the idea from my daughter. She makes her toddler veggie patties and I tried one. Not bad, and then my mind started working...why not spice them up like sausage. I have no recipe for this, but here is the general idea. (More fun to make it up as you go.)
I had on hand:
broccoli
squash
green pepper
I used the food processor to finely chop the veggies, then added flour, one egg, and some bread crumbs. You want it thick enough to hold it's shape. I guess I used about 1/4 cup flour.
For the seasoning, I added red pepper, pepper, garlic salt, poultry seasoning---a pretty heavy hand on the poultry seasoning. I did not have just sage.
I used just a little olive oil in my skillet and dropped in about 1 Tablespoon and then flattened it some. Browned well and then flipped and browned on the other side.
So I made a sandwich: toasted buns, one patty with one egg topping egg with 1/2 slice melting cheese for brunch. Hubby ate it knowing what it was...next time I can put two patties on his...his request.

Oh, I might add---nothing surprising to chew on in these patties--you know what I mean? And they were delicious.
