Mom's Rice Dish

1 cup comet long grain rice
2 1/2 cups chicken broth
1 medium carrot chopped
2 pieces chopped celery
2 T cooking oil
1/2 t instant onion
salt and pepper to taste
Put rice, carrot, celery and instant onion in heavy skillet and cook in oil until the rice is chalky white.  Stir constantly or it will get to brown in spots.  Add broth and lower the heat and cook slow until done.  Add salt and pepper to your taste.
