Stir Fried Spaghetti

Sometimes I have left over cooked spaghetti, with no sauce, which I put in the freezer for a later meal.  The other day I needed a quick meal, so out came the frozen package of spaghetti...enough for a meal for two.

Stir Fried Spaghetti

One frozen package of left over spaghetti
1 small green pepper, chopped
1 small sweet onion, chopped
1 small zucchini, chopped
2 cloves garlic, chopped
1 or 2 Roma tomatoes, quartered
1 Tablespoon soy sauce...more or less to taste
1 Tablespoon oil of choice
scant red pepper flakes (one or two shakes)

Defrost spaghetti in microwave for a few minutes..you want it to still be cold but able to come apart into strands.  Stir fry veggies over medium to low heat in oil until tender crisp...add spaghetti, continuing to stir until heated.  Add soy sauce and tomatoes.  Continue to gently stir until  well heated..but don't cook to long. You don't want the tomatoes to loose their shape and become mush.  Serve hot.

Now for the surprise sauce.
When you serve your portion, top with Ranch Dressing, as you would your salad...more dressing or less dressing. 
Hubby used ketchup, but Ranch is better.  A delicious meatless pasta dish.
