Easy, Easy Pickled Okra and Peppers

Crisp Pickled Okra

Native Texas peppers

Pickled Jalapenos

This recipe is for Pickled Okra, but I thought it would work for Peppers also....so I bought some peppers while they were on sale and put them in jars.
Pickled Okra
garlic (1 glove per jar)
hot pepper ( 1 per jar)
dill seed ( 1 t. per jar)
1 quart white vinegar
1 cup water
1/2 cup salt
young okra pods

Place garlic and pepper in bottom of clean, hot pint jars.  Pack firmly with young okra pods, with stem ends 1/2 inch long.  Add dill seed.  Bring vinegar, water and salt to a boil.  Simmer about 5 minutes and pour, while hot, over okra.  Seal immediately.  Fills from 5 to 7 pints jars.

I found this easy recipe in an old cookbook that was given to me in 1973.  It is just simple and easy.  If the jars do not seal, just place them in the fridge.  These are very sharp and tasty.
